Butterbeer

Ingredients: 1 Cup of Brown Sugar
2 Tbsp of Water
6 Tbsp of Butter
1/2 tsp of Salt 1/2 tsp of Cider Vinegar
3/4 Cups of Heavy Cream, Divided
1/2 tsp of Rum Extract
4, 12 oz Bottles of Cream Soda
1. Combine the brown sugar and water into a small saucepan. Bring to a gentle boil and cook stirring often until it reaches 240 degrees.
2. Stir in butter, salt, vinegar and 1/4 cup of heavy cream Let cool to room temperature and stir in the rum extract.
3. Combine 2 Tbsp of brown sugar mixture with 1/2 cup of heavy cream. Beat with electric mixer for 2 to 3 minute until thickened, but not completely whipped.
4. To serve divide remaining brown sugar mixture between 4 tall glasses.
Add 1/4 cup of cream soda to each glass, stirring to combine.
Fill each glass nearly to the top with the additional soda. Spoon whipped topping over each and serve.
